Ingredients
  • 2 1/2 cups flour
  • 2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 3/4 cup coconut sugar + 1 tbls. spoon for sprinkle
  • 1/2 cup olive oil
  • 1 1/2 cup Almond milk
  • 1 tbls. white vinegar
  • 1 tbls. vanilla
  • 2 cups blueberries (best fresh but frozen works too)
  1. In a bowl, whisk together all dry ingredients, flour, baking soda, salt, and sugar.
  2. In a separate bowl, whisk together oil, almond milk, vinegar, and vanilla.
  3. Mix dry and wet ingredients. Mix well.
  4. Fold in berries.
  5. Fill into a muffin tin lined with 12 paper liners.
  6. Sprinkle with remaining sugar.
  7. Bake for 25 to 30 minutes in a preheated 175 C  oven.

TIP: Muffins are best eaten the day they are made. Can be frozen and reheated at low temperature for 2-3 min.
