Æbleskiver is a 400 years old Danish tradition. It means *sliced apple* as they started out as an apple slice covered in dough.
Traditionally people had æbleskiver in February to a carnival,that we are still celebrating, but now they are very popular around christmas time.

Prep time : 10 min. + restting time and baking time.

For making approx. 25 æbleskiver you will need:

4 dl rice milk
240 g Flour 
3 tabl. fresh lemon juice
1 teaspoon Baking Powder
1⁄4 teaspoon crème de tatar
1 tablespoon Sugar
1/4 teaspoon Salt
3 tabl. apple sauce

1.Mix all ingredients very well, except from the apple sauce.

2.Leave in bowl to rest for 15 min.

3.Add the apple sauce.
4.Mix well.
5.Fry in butter in a æbleskive pan or other pan with holes approx. 5-6 cm.

Fill the hole up, when the dough is stiffening on the edge, turn with a thin stick and fry on the other side.

Serve with strawberry or raspberry jam and icing sugar for
dipping.
